Cinnamon Latte Cupcakes

If you have no already noticed, there has been a theme running through my recent bakings. That theme has been hot drinks. So I've already baked Hot chocolate cupcakes and White hot chocolate cupcakes and decided my next creation will be latte based. I love all lattes, no matter what the flavour is. To keep inside my christmas theme, I though a touch of cinnamon would work a treat. So here are my cinnamon latte cupcakes!




Ingredients:

For Cake (Makes 6):
  • All purpose flour - 125g
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teasppon nutmeg
  • 1 teaspoon vanilla essence
  • Butter - 110g
  • Brown sugar - 55g (I used white but have also tried brown and prefer the brown sugar)
  • 1 egg
  • 2 table spoons milks
  • 1/4 of a muf brewed coffee
For the topping:
  • 8 table spoons milk
  • 3 table spoons plain flour
  • 1 teaspoon vanilla essence
  • Butter - 110g
  • Granulated sugar - 125g

Method:

  1. Firstly preheat the oven to 170 degrees celsius and line a cupcake tray with 6 paper cases.
  2. Now cream together the butter and sugar until fluffly. Then add the egg and the vanilla essence.
  3. In a separate bowl mix together the remaining of the dry ingredients (flour, baking powder, cinnamon, nutmeg and salt.)
  4. Now prepare a 1/4 mug of coffee and sirt in the milk. Then add this mixture to the wet ingredients.
  5. Finally, fold in the dry ingredients a bit at a time and stir thoroughly until all the ingredients are combined.
  6. Now evenly spread out the batter into the paper cases and bake for 20 minutes or until a toothpick comes out clean.
  7. Once baked leave to cool.
  8. Whilst leaving the cakes to cool you can make a start on the frosting. Add the flour and milk to a saucepan and heat on a low heat, stirring constantly. The mixture will quickly thicken, keep stirring until the mixture resembles a thick batter. Now remove from the heat and leave aside to cool.
  9. Next mix together the butter and sugar until smooth. Now add this mixture to the flour and milk and stirr thoroughly or use an electric whisk until all ingredients are combined. 
  10. Finally spoon on the frosting and lightlt dust the top with cinnamon and add christmas decorations if you desire. I used paper straws to give the effect of a hot drink.
